Chocolate Mint Sandwich Cookies

My wife, who loves the combination of chocolate and mint, was looking for a special treat to make for a friend who had moved into the neighborhood. She used her quick chocolate cookie recipe, created a mint cream, and combined them to create this Chocolate Mint Sandwich Cookie. In the end, both her friend and our family enjoyed these delicious parve cookies.
