As far as I'm concerned, great snacks are as essential to the Super Bowl as exciting plays. Maybe it's the snappy crunch of the tortilla chips, the heat of the salsa, and the potential for things to get a little messy, but nachos just scream "eat me while you watch football!!!"
In honor of the big game, I gussied up our nachos with stone-ground blue corn tortilla chips, pan-roasted corn, and green olives. We'd scarfed down half the platter when I suddenly realized we hadn't had them all year. That's ridiculous. Nachos are entirely too yummy -- and too easy to prepare -- to ignore. These Blue Corn Nachos with Black Beans and Corn are actually pretty nutrient dense and full of fiber, so it's not hard to justify enjoying them a little more often. Plus the recipe is endlessly adaptable. Just start with a sturdy, whole grain chip, keep an eye on proportions, and switch up the beans, cheese, and condiments to suit your menu or mood. The possibilities are endless.
