I like the feeling of knowing I can go into my pantry, especially when it is almost empty, and manage to put together something comforting to eat. If you have oil, flour, sugar, eggs and cottage cheese, then you can make these delicious, kosher-dairy pancakes for your family.
Ingredients:
- 2 Tbsp. butter
- 1 cup all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. baking soda
- 1-2 Tbsp. sugar
- 4 eggs
- 16 ounces (400 grams) cottage cheese
Preparation:
1. Melt butter in frying pan.
2. In a mixing bowl, mix together dry ingredients - flour, baking powder, baking soda and sugar.
3. In a separate bowl, mix eggs and add cottage cheese until smooth.
4. Combine egg and flour mixtures. Mix in melted butter.
5. Drop batter by spoonfuls into hot frying pan.
6. Flip when top of pancake bubbles.
