When everyone raves about these Spinach Cheese Squares in Phyllo, you can play along and let them think you slaved away. Maybe then they will offer to do the dishes, while you lay on the couch and read a good book!

Cook Time: 50 minutes

Ingredients:

  • 6-8 sheets phyllo dough
  • melted butter for brushing phyllo
  • FILLING:
  • 10 oz. Mozzarella, shredded
  • 6 oz. Cheddar, shredded
  • 3/4 lb. cottage cheese
  • 3/4 tsp. salt
  • 2 eggs
  • 15 oz. frozen chopped spinach, thawed and drained well
  • 1 1/2 tsp. parsley flakes
  • TOPPING:
  • 1 1/2 cups milk
  • 5 eggs

Preparation:

1. Spray a 9x13 inch baking dish.
2. Layer 3 to 4 sheets of phyllo in bottom of pan, brushing each with melted butter.
3. Mix all filling ingredients and put on top of dough.
4. Cover with 3 to 4 more sheets of phyllo and butter each.
5. Cut into serving pieces. Chill 1 hour.
6. Mix eggs and milk. Pour over the squares. Refrigerate overnight.
7. Bake 40 to 50 minutes at 375 degrees Fahrenheit or until golden brown.
