Quick Kosher Cookies (Parve)

An enthusiastic visitor to the About.com Kosher Food site and mother of three has contributed this Quick Kosher Cookie Recipe. It is very easy to make with just four ingredients and four steps. And it is very versatile as a variety of cake mixes and mix-ins can be used. Surprise your kids today with these tasty treats.

Prep Time: 5 minutes

Cook Time: 20 minutes

Ingredients:

  • 1 box Devil's Food cake mix (parve)
  • 2 eggs, beaten
  • 1/2 cup oil
  • 1 cup chocolate chips (parve)

Preparation:

1. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
2. Mix all ingredients. The batter will be thick.
3. Drop from teaspoon onto an ungreased cookie sheet.
4. Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 8-10 minutes (may need longer depending on size of cookie or how your oven heats). Cool on wire cookie rack.

VARIATIONS:

1. Use other cake mixes.
2. Mix in M&Ms, peanut butter chips, butterscotch chips, nuts, .... Remember that if you use dairy mix-ins, then the cookies will be dairy rather than parve.
3. For brownies, place batter in an ungreased 8x11 inch glass pan. Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 18-22 minutes or until a toothpick inserted comes out clean. Cool before cutting.

NOTE: If batter seems too thick, add a few more drops of oil.
