Mandelbrot, which literally means almond (mandel) bread (brot), is a twice-baked hard bread similar to Italian biscotti. While classic Mandelbrot is made with almonds, my kids prefer this Americanized version with chocolate chips.

Ingredients:
- 1 cup canola oil
- 1 cup sugar
- 3 eggs
- 3 cups flour
- 2 teaspoons baking powder
- 4 teaspoons ground cinnamon
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1 cup pecans, finely chopped
- 1/2 cup parve chocolate chips
- TOPPING:
- 3 Tablespoons sugar
- 1/2 teaspoon cinnamon
Preparation:
1. In a large bowl, mix oil, sugar, and eggs.
2. In another bowl, mix flour, baking powder, cinnamon, salt, vanilla and almond extract.
3. Slowly stir dry ingredients into oil mixture. Then fold nuts and chocolate chips into batter. Cover and place in refrigerator for 30 minutes. The batter will be thick.
3. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius). Place parchment paper on 2 cookie sheets.
4. Using oiled hands, shape the dough into 2 loaves (3/4 inch thick). Sprinkle some of the cinnamon sugar topping on the loaves.
5. Bake at 350 degrees Fahrenheit (180 degrees Celsius) for 30 minutes or until golden brown. Remove from oven and cool for 5 minutes.
6. Slice into 1 inch thick diagonals. Turn cookie on side, sprinkle some cinnamon sugar topping on the cut side of the cookie, and return to oven for about 5 more minutes to toast. Repeat with the second cut side of the cookie.
