Everyone in my family, even the child that always says "I don't like fish", loved this fish! Naomi Muller's Batter-Fried Fish is easy to make and delicious. While frying isn't optimal, the recipe compensates in the health arena by using whole wheat or whole spelt flour. Muller also provides a wheat-free alternative that uses brown rice flour and oat flour.
Ingredients:
- 1 1/3 cups whole wheat OR whole spelt flour
- 2 teaspoons baking powder
- 2/3 teaspoon salt
- 3 tablespoons plus 1 teaspoon butter
- 1 pound (1/2 kilo) sole or flounder
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 large egg, beaten
- 1 cup club soda or seltzer
- oil for frying
Preparation:
1. Mix flour(s), baking powder, salt and spices. Cut in butter with a pastry blender or two forks until it resembles fine crumbs. Set aside.2. Heat oil in deep fryer to 375 degrees Fahrenheit (190 degrees Celsius).
3. Rinse fish and pat dry.
4. Combine flour mixture, egg and club soda to make a thick batter.
5. Dip fish into the batter. Deep fry fish, a few pieces at a time for about 5 minutes or until it is deep golden brown and the fish flakes easily. Drain on paper towels.
VARIATION: For a wheat-free alternative, use 2/3 cup brown rice flour and 2/3 cup oat flour.
