Baked Fish with Vegetables and Scalloped Potatoes

What better way to bake fish than to surround it with a variety of fresh vegetables and flavor it with white wine, lemon juice and spices?

Prep Time: 10 minutes

Cook Time: 40 minutes

Ingredients:

  • 2 lbs. (1 kilo) salmon steaks or other fish
  • 1 onion, chopped
  • 1 tomato, chopped
  • 1 green pepper, chopped
  • 1 cup fresh mushrooms, sliced
  • 1/2 cup dry white wine
  • 2 tablespoons lemon juice
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper

Preparation:

1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celsius). Spray a 12x8 inch baking dish with non-stick cooking spray.
2. Place fish in dish.
3. Mix vegetables together and spread over the fish.
4. Mix wine, lemon juice, parsley, salt and pepper together. Pour over fish and vegetables.
5. Cover. Bake at 350 degrees Fahrenheit (175 degrees Celsius) for 30-45 minutes, or until fish flakes easily when tested with a fork.

YIELDS: 6 servings.

TIPS: Fish bought fresh from a fish store is generally much better than salmon bought from the grocery store frozen section.
