For an easy, quick and healthy kosher meal, try poached salmon.
Ingredients:
- 1 1/2 cup dry white wine
- 1 cup water
- 3 lemon slices
- 1 onion, peeled and quartered
- Dill, parsley, bay leaves or other herbs, in sprigs
- 12 peppercorns
- 1 teaspoon kosher salt
- 1 pound fresh salmon filet, skinned and boned
Preparation:
1. Combine all ingredients except salmon in a covered saucepan large enough to hold everything.2. Bring to a boil. Reduce to a simmer.
3. Add the salmon and cover.
4. Cook for 5-8 minutes until just done.
5. Carefully remove the salmon and refrigerate.
SERVING SUGGESTIONS:
Serves three portions. Serve decorated with lemon and cucumber slices.
