Naomi Muller's Tuna Patties call for just seven ingredients, all of which are likely to be sitting in your pantry at any time. I don't actually use her measurements when I make these. I add a lot more potato and a lot less garlic. I also fry in canola oil. These are a nice twist when you're tired of serving the same-old for dinner.
Ingredients:
- 2 7-ounce (200 grams) cans tuna OR 1 15.5-ounce (440 grams) can salmon
- 1 large potato, boiled with skin on - must be warm
- 3 eggs
- 2 teaspoons sea salt
- 2 teaspoons garlic powder
- 1 small onion, minced
- light tasting olive oil for frying
Preparation:
1. With an electric mixer on medium speed, beat together tuna, warm potato and eggs.
2. Add seasonings and onion. Beat until combined.
3. Shaped into medium sized patties.
4. Fry over medium heat in a little bit of oil.
5. Drain well on paper towels.
