Nechama Cohen, Founder and Executive Director of the Jewish Diabetes Association (JDA) and author of EnLITEned Kosher Cooking, shares this low-carb, low-fat recipe for Cabbage Latkes (Pancakes). Enjoy a healthy Hanukkah by preparing these Cabbage Latkes instead of fried Potato Latkes.
Ingredients:
- 2 cups cabbage, finely grated
- 1 whole egg plus 2 egg whites
- 1 scallion, chopped
- 2 tablespoons soy or whole-wheat flour
- salt and pepper to taste
- non-stick cooking spray
- 1 tablespoon canola oil
Preparation:
1. Place the cabbage in a 4-cup bowl. With a wooden spoon, mix in the eggs and scallion. Add flour and season to taste.
2. Using wet hands, form latkes.
3. Wipe a non-stick frying pan with a paper towel dipped in oil and spray the pan with non-stick cooking spray. 4. Put on medium heat. Wait until hot and drop batter by tablespoonfuls into pan. Fry latkes, over medium-high heat, for 4-5 minutes until firm and browned on both sides.
