This child-friendly Macaroni Salad can be the starchy side dish on your barbecue menu. While this simple pasta salad can be easily dressed up with cherry tomatoes, red onion, broccoli, carrots or other raw vegetables, my kids prefer it plain.

INGREDIENTS:

  • 1 16 ounce (400 gram) package small macaroni
  • 6 Tablespoons mayonnaise
  • 2-3 Tablespoons lemon juice
  • 1/4 teaspoon mustard
  • 1/2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/4 teaspoon pepper

PREPARATION:

1. Prepare pasta according to package directions.
2. While the pasta is cooking, in a small bowl mix together the mayonnaise, lemon juice, mustard, garlic powder, salt and pepper.
3. When the pasta is done cooking, drain but do not rinse.
4. While the pasta is still hot, mix the noodles with the dressing.
5. Serve at room temperature or chilled.

VARIATION:
Add cherry tomatoes, red onion, broccoli, carrots or other raw vegetables to the salad.
