When I served this carrot salad for Shabbos lunch, my Dutch friend said "This salad tastes like Thanksgiving." She said the combination of carrots, apples, pecans, cinnamon and sugar are very "American." So I've decided to call this salad American Carrot Salad.

Ingredients:
- 6 medium carrots, grated
- 2 small Granny Smith apples, finely diced
- 1/4 cup chopped pecans
- 1/4 cup raisins
- 4 Tbsp. mayonnaise
- 3 tsp. sugar
- 1 tsp. lemon juice
- 1 tsp. vanilla
- 1 tsp. cinnamon
Preparation:
1. Mix all ingredients together.
