Marinated Cauliflower is a great dish to prepare during the winter months when cauliflower is in season and low-carb, low-fat snacks are a good idea.

Ingredients:
- 1 medium-large cauliflower
- 1/2 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon lemon juice
- 1/2 small red pepper, finely chopped
- 1/2 small onion, finely chopped
- 2 garlic cloves, minced
- 2 tablespoons fresh parsley, finely chopped
- 2 teaspoons sugar
- 1 teaspoon salt
- 1 teaspoon basil
- 1/8 teaspoon freshly ground black pepper
Preparation:
1. In one large pot, bring generously salted water to a boil. In another large pot, prepare an ice bath with ice cubes covered with water.
2. Clean and cut cauliflower into florets. Put the florets into the boiling water. Let boil for 3 minutes. With a slotted spoon, remove the florets from the boiling water and place in the ice bath. Once the cauliflower has reached room temperature, drain and place in a large glass jar or bowl.
3. In a separate small bowl, combine the rest of the ingredients. Pour the marinade over the blanched cauliflower. Gently mix.
4. Chill overnight.
Note: Olive oil may get hard in the refrigerator. Before serving, let the marinated cauliflower sit out at room temperature for 20 minutes and stir to soften the oil.
