I was served a wonderfully refreshing, lite, healthy and tasty appetizer for lunch on Shabbat. Yogurt Fruit Soup. The best part was that my kids really liked it too!
Prep Time: 10 minutes
Ingredients:
- 2 cups plain yogurt
- 2 cups orange juice
- 1 Tablespoon lemon juice
- 1/2 Tablespoon honey
- dash cinnamon
- dash nutmeg
- fresh fruit or berries (whatever is in season: apples, bananas, oranges, plums, peaches, dates...)
Preparation:
1. In a bowl, whisk together yogurt, orange juice, lemon juice, honey, cinnamon and nutmeg. Store in a covered container in the refrigerator.
2. Just before serving, cut fruit into bite-sized pieces. Mix the fruit into the yogurt soup.
YIELDS: 4 servings
