In England a sponge pudding is a hot cake that is served for dessert. Traditionally it is steamed in a water bath in the oven for over 1 1/2 hours. However, this recipe "cheats" by cooking the pudding in a microwave for less than 10 minutes.
Ingredients:
- 8 ounces (250 grams) sugar
- 8 ounces (250 grams) margarine
- 8 ounces (250 grams) cake flour
- 2 teaspoons baking powder
- 3 eggs
- 2 tablespoons water
- 1 teaspoon vanilla
- jam of your choice
Preparation:
1. Mix all the ingredients together in an electric mixer for about 3 minutes.
2. Grease a deep round pyrex dish.
3. Spread the jam at the bottom of the dish.
4. Pour the mixture on top of the jam.
5. Cover the bowl with plastic wrap. Then, with a fork, poke some wholes into the plastic wrap.
6. Cook on high in a microwave oven for 9 minutes.
7. Let stand in the oven for 5 minutes before opening the door.
VARIATION: For a pecan pudding: Use brown sugar instead of white sugar. At the bottom of the greased bowl, replace the jelly with 2 ounces (60 grams) pecans and 3 tablespoons of maple syrup.
