Homemade Gefilte Fish (Parve)

By Giora Shimoni, About.com

In her book That Hungarian's in my Kitchen, Linda Radke provides this recipe for homemade Gefilte Fish. Gefilte Fish is traditionally eaten as a Jewish Sabbath or holiday meal appetizer. Serve these fish balls on a piece of lettuce with a side of horseradish sauce.

Prep Time: 15 minutes

Cook Time: 18 minutes

Ingredients:

  • 2 pounds (1 kilo) carp or any white fish
  • 4 eggs
  • 1 large onion, diced
  • matzo meal
  • 1-2 carrots, grated
  • 2 teaspoons cumin (optional)
  • salt and pepper to taste
  • boiling water

Preparation:

1. Mix all ingredients together. Use enough matzo meal to make the mixture about the texture of hamburger.
2. Form into balls or patties.
3. Bring a large pot of water, with a pinch of salt, to a boil.
4. Cook the fish balls in the boiling water for 12-18 minutes.

SERVING SUGGESTIONS: Serve as an appetizer on a lettuce leaf with horseradish sauce on the side.

YIELDS: 6-8 servings
