In reviewing Susie Fishbein's cookbooks, I have permission to put three recipes from each book online. It is never an easy task to choose three from the many gems Fishbein includes in her books. I chose this recipe - Creamy Garlic Salad from Kosher by Design: Lightens Up - because I could see myself making this delicious, healthy, parve lettuce salad often throughout the year.

Ingredients:
- DRESSING:
- 5 tablespoons low-fat mayonnaise
- 2 tablespoons sugar
- 3 tablespoons white vinegar
- 1 tablespoon water
- 3 cloves fresh garlic, minced (you may use 3 frozen garlic cubes)
- 1/4 teaspoon fine sea salt
- 1/4 teaspoon freshly ground pepper
- SALAD
- 1 large head romaine lettuce, cut into bite-size chunks
- 2 small kirby cucumbers, peeled, cut into 1/4-inch rounds
- 1 cup sliced button mushrooms
- 1 cup croutons
Preparation:
1. In a medium bowl, whisk the mayonnaise, sugar, vinegar, water, minced garlic, salt and pepper. Set aside.
2. In a large salad bowl, toss the romaine with the cucumbers and mushrooms. Lightly dress. Top with croutons.
