Ingredients:
- 4 large potatoes
- 2 Tbsp. margarine, melted
- 2 Tbsp. non-dairy creamer
- 1 tsp. salt
- 3 Tbsp. oil
- 2 medium onions, finely chopped
- 2 celery stalks, finely chopped
- 2 carrots, finely chopped
- 2 cloves garlic, pressed
- 2 pounds (1 kilo) ground beef
- 2 Tbsp. all-purpose flour
- 2 Tbsp. tomato paste
- 1 tsp. sugar
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 2 cups chicken or beef soup (you can use boiled water and powdered soup mix)
- paprika
Preparation:
1. Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius). Coat an 8x8 inch baking pan with non-stick cooking spray.2. Peel potatoes. Place in a pot of salted water. Cover and bring to a boil. Lower heat, and let potatoes cook until soft enough to mash with a fork. Drain. Mash. Add margarine, non-dairy creamer and salt. Set aside.
3. In a large skillet, heat oil and saute onions, celery, carrot and garlic until vegetables are softened.
4. Add ground meat, and cook until the meat is browned.
5. Add flour and cook, stirring, until well combined. Add tomato paste, sugar, salt, pepper and soup. When well combined and thickened, taste and adjust seasonings as desired.
6. Place meat in the baking dish. Cover with the mashed potatoes. Sprinkle paprika on top. Bake for 30 minutes, or until the potatoes begin to brown.
Yields: 8-10 servings.
