Shepherd's Pie

Giora Shimoni
Shepherd's Pie, which is believed to have originated in northern England and Scotland, was originally made with lamb meat, as the name implies. However, in America, many make Shepherd's Pie with ground beef. Just serve a green salad with Shepherd's Pie for an economical and satiating family dinner, Sabbath lunch or even Passover meal.

Prep Time: 30 minutes

Cook Time: 30 minutes

Ingredients:

  • 4 large potatoes
  • 2 Tbsp. margarine, melted or 2 Tbsp. canola oil
  • 2 Tbsp. non-dairy creamer or 2 Tbsp. soy milk
  • 1 tsp. salt
  • 3 Tbsp. oil
  • 2 medium onions, finely chopped
  • 2 celery stalks, finely chopped
  • 2 carrots, finely chopped
  • 2 cloves garlic, pressed
  • 2 pounds (1 kilo) ground beef
  • 2 Tbsp. all-purpose flour
  • 2 Tbsp. tomato paste
  • 1 tsp. sugar
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 2 cups chicken or beef soup (you can use boiled water and powdered soup mix)
  • paprika

Preparation:

1. Preheat oven to 350°F (180°C). Coat an 8x8 inch baking pan with non-stick cooking spray.
2. Peel potatoes. Place in a pot of salted water. Cover and bring to a boil. Lower heat, and let potatoes cook until soft enough to mash with a fork. Drain. Mash. Add margarine (or 2 Tbsp. oil), non-dairy creamer (or 2 Tbsp. soy milk) and salt. Set aside.
3. In a large skillet, heat 3 Tbsp. oil and saute onions, celery, carrot and garlic until vegetables are softened.
4. Add ground meat, and cook until the meat is browned.
5. Add flour and cook, stirring, until well combined. Add tomato paste, sugar, salt, pepper and soup. When well combined and thickened, taste and adjust seasonings as desired.
6. Place meat in the baking dish. Cover with the mashed potatoes. Sprinkle paprika on top. Bake at 350°F (180°C) for 25-30 minutes, or until the potatoes begin to brown.

Yields: 8-10 servings.
