Kosher Poultry Recipes

Kosher poultry includes chicken, turkey, duck, Cornish hen and goose. A wide variety of traditional and contemporary entrees can be made with poultry.
JoAnn's Chicken Marinade
I regularly use this marinade, contributed by my sister-in-law's mother-in-law JoAnn Kerker, on my oven-baked Shabbat chicken. The ingredients are common so no extra shopping is necessary. The wine and mushrooms add a festive touch to the Sabbath dish. And the marinade produces a flavorful and moist chicken that is delicious right out of the oven on Friday night as well as warmed-up for Saturday lunch.
Top Shabbat Chicken Recipes
Chicken is the most popular Shabbat entree. It is so versatile. Chicken is delicious whether roasted, fried, cooked, breaded, marinated, or stuffed. As such, I favor the easy-to-make chicken recipes. The following are my favorite chicken recipes for Jewish Sabbath meals.
Apple Glazed BBQ Chicken (Meat)
Chavi Feldman of Chashmonaim, Israel contributed this Apple Glazed BBQ Chicken recipe for the autum Rosh Hashanah holiday. This chicken recipe uses apples which are both a symbol of the Jewish New Year and reflective of the season of the year.
Apricot Chicken (Meat)
So simple and so good! This Apricot Chicken is my family's favorite saucy chicken recipe. I like to make it for Shabbat lunch because it is moist enough to serve the day after baked.
Barbecue Glazed Chicken and Potatoes (Meat)
I like to serve chicken with potatoes for Friday night Sabbath dinner. I like the fresh cooked aroma it lends to the home. On Saturday, when food is heated on a hot plate in accordance with Judaism's Sabbath cooking laws, kugels or rice work better than potatoes as side dishes.
Breaded Baked Chicken (Meat)
This recipe for Breaded Baked Chicken is quick, easy, loved by all and even good the next day. What else could anyone ask of a recipe? This is a great Sabbath lunch entree.
Chicken Marsala - Remer & Weinstein (Meat)
Chicken Marsala, a classic Italian chicken dish, makes a wonderful Sabbath entree. Serve with parve mashed potatoes and a green vegetable for a simple-to-make and delicious-to-eat dinner.
Chicken Pot Pie (Meat)
Chicken pot pie is a great way to use chicken left-over from making soup.
Chicken Schnitzel (Meat)
Schnitzel, which means cutlet in German, originally referred to deep-fried, breaded veal cutlets popular in German cuisine. The name and idea were borrowed by Jews, and today Israeli children are practically raised on chicken schnitzel.
Chicken Tagine with Prunes & Almonds - Levana Kirshchenbaum (Meat)
According to Levana Kirshchenbaum, tagine originally referred to the clay pot used to cook food over hot coals. Today, however, tagine refers to meat, poultry or fish cooked with vegetables until the liquids are reduced and thickened. This Chicken Tagine with Prunes and Almonds comes from her wonderful cookbook, Levana's Table - Kosher Cooking for Everyone.

Looking for a great-tasting, good-looking, one-skillet chicken dish that all your guests - young and old - will love? Susie Fishbein provides this winning recipe for Farfalle Chicken in her Kosher by Design: Entertains cookbook.
Honey Mustard Chicken (Meat)
This saucy Honey Mustard Chicken - with its curry and garlic kick - is perfect for Jewish holiday and Sabbath lunches because it does not dry out when reheated on the Shabbat Plata (hotplate). The honey in it makes is particularly fitting for Rosh Hashanah lunch. Serve with rice, which can be topped with the chicken's extra sauce, and a green salad or vegetable.
Kids 4-by-4 Chicken - Miriam Zakon (Meat)
Did you know that your child can prepare chicken for the Sabbath dinner? This 4-by-4 Kosher Chicken recipe, from Miriam Zakon's wonderful The Kids Kosher Cookbook: Do-It-Yourself Recipes Your Kids Will Love to Cook, is easy and delicious. Your child will enjoy making it, serving it and eating it!
Lemon Olive Roast Chicken (Meat)
Bring a taste of Israel to your Shabbat table by serving this Lemon Olive Roast Chicken for the Friday night Sabbath dinner. This chicken is especially popular in Moroccan Jewish homes, where it was often served with couscous or rice.
Maple Chicken with Potatoes (Meat)
I turn to this recipe whenever I am rushed and need to quickly prepare a kosher meat meal that kids will also eat. Peel and cube potatoes, place chicken pieces on top, pour maple syrup (parve) on top, and bake. I like to serve the Maple Chicken and Potatoes with roasted asparagus or peas for a complete meal.
One Pot Shabbat (Meat)
This recipe cooks the chicken and the rice together in the same pot. The rice is delicious as it absorbs the juices from the chicken. Make sure that the chicken is sealed tightly when cooking so that the steam stays in the pot and keeps the chicken moist.
Sesame Chicken with Pineapple (Meat)
Who would know that a recipe with just five ingredients could be such a hit? My children loved this Sesame Chicken with Pineapple. For dinner tonight, serve this chicken with brown rice and roasted broccoli.
Simple Roast Chicken (Meat)
Roast chicken proves that sometimes simple is better. Simply mix spices, coat chicken and then roast in the oven. You can make preparation and serving even easier by buying a chicken cut into eighths. The result is a moist and flavorful chicken entree that everyone will love.
Teriyaki Chicken (Meat)
I like to serve this light and flavorful Teriyaki Chicken in the summer with white rice and colorful vegetables. In line with Jewish Dietary Laws, make sure the margarine used in this meat dish is parve and not dairy.
