Cauliflower Carrot Salad

Cauliflower and carrots are a delicious combination. And it is so easy, healthy and economical to cut up fresh vegetables and flavor them with juice, oil and spices? So add color, nutrition and variety to your meals by serving this Cauliflower Carrot Salad.

Prep Time: 15 minutes

Total Time: 15 minutes

Yield: 8-10 servings

Ingredients:

  • 1 small cauliflower
  • 2 carrots
  • juice from 1 orange
  • juice from 1 lemon
  • 1 Tbsp. oil
  • 1 Tbsp. sugar
  • salt and freshly ground pepper to taste
  • 1 Tbsp. fresh dill, chopped (optional)

Preparation:

1. Wash cauliflower. Break off small florets, and put into a salad bowl.
2. Either peel carrots or slice thinly lengthwise. Add to the cauliflower.
3. In a small bowl, mix juices, oil, and sugar. Pour over salad and mix well.
4. Season with salt and pepper to taste. If desired, add chopped dill.
