Kohlrabi, which tastes a bit like a mild, sweet broccoli stem, is popular in Israel in soups and salads. While kohlrabi is delicious just sliced and seasoned with fresh lemon juice, olive oil, salt and pepper, this recipe softens it up by salting it for first. The result is a healthy dish that can be enjoyed at the table like a relish.

Ingredients:
- 1 kohlrabi
- salt
- 1 Tbsp. olive oil
- juice from 1/2 lemon
- salt and freshly ground pepper to taste
Preparation:
1. Peel kohlrabi and slice into thin strips. Mix with salt, and let it sit for 20 minutes.
2. Rinse off the salt, and place the kohlrabi in a bowl.
3. Mix the kohlrabi with oil, lemon juice, salt and pepper.
4. Refrigerate. Serve chilled.
