I like to be able to quickly make a variety of salads, especially in the summer. They add a colorful, healthy and light touch to everyday and Sabbath meals. Simply buy a package of ready-cut vegies, combine a few ingredients for the dressing, and stir. In addition to being a quick-fix, I like this 2-Minute Cole Slaw recipe because it is not too heavy and saucy.

Ingredients:
- 1 pound (400 gram) package of pre-cut cabbage and carrots
- 1/4 cup mayonnaise
- 1 Tablespoon lemon juice
- 1 Tablespoon white vinegar
- 1/2 teaspoon sugar
- 1/2 teaspoon salt
Preparation:
1. Mix mayonnaise, lemon juice, vinegar, sugar and salt in a small bowl to make the dressing.
2. Toss the above dressing with the pre-cut vegetables.
NOTE: If you like your cole slaw sweet, then add a bit more sugar to the above recipe (1 teaspoon instead of 1/2 teaspoon).
