This Crunchy Red Cabbage Salad, contributed by English friends who moved to Israel, is tasty, healthy and easy to prepare. The humus sticks, dried cranberries and cashews are all optional additions, as the salad is good even without these treats. To add color and variety to your Shabbat afternoon meal, serve this delicious salad.

Ingredients:
- 1 red cabbage, chopped
- 5 scallions, chopped
- 1/2 cup vinegar
- 1/2 cup sugar
- 1/4 cup canola oil
- 4 Tbsp. soy sauce
- humus sticks
- dried cranberries or craisins
- cashew nuts
Preparation:
1. In a large bowl, mix chopped cabbage and onions.
2. In a small bowl, mix vinegar, sugar, oil and soy sauce. Pour this dressing on the cabbage and onion mixture. Mix well, cover and refrigerate until ready to serve.
3. Just before serving, add humus sticks, cranberries and cashews.
Note: This salad is best when the cabbage marinates in the dressing for a few hours or overnight before serving.
