Festive Israeli Salad (Pareve)

Whether eating in Israel in a restaurant or in someone's home, you are likely to find some version of this finely diced, tomato-cucumber based salad.

INGREDIENTS:

  • 3 tomatoes
  • 3 cucumbers
  • 1 small onion
  • 4 radishes
  • 4 scallions
  • 2 carrots
  • 1 green bell pepper
  • 1 red bell pepper
  • 1 cup cabbage
  • 1 avocado (optional)
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper

PREPARATION:

1. Cut tomatoes, cucumbers, onion, peppers and avocado into small cubes.
2. Cut radishes, carrots and cabbage into fine strips.
3. Cut green onions.
4. Put all the vegetables into a bowl and gently mix.
5. Immediately before serving, season lightly with olive oil, lemon juice, salt and pepper.

SERVING SUGGESTIONS:

Serve this salad fresh.
