This Spinach Strawberry Salad with Poppy Seed Dressing is a refreshing summer salad. For a more festive salad, add either sliced purple onion or slivered almonds.

Yield: 6-8 servings
Ingredients:
- SALAD:
- 10 ounces (300 grams) fresh spinach
- 1 quart (4 cups) fresh strawberries, sliced
- DRESSING: (can be made days in advance)
- 1 cup vegetable oil
- 3/4 cup sugar
- 1/3 cup white vinegar
- 1/2 small onion
- 1 tsp. dry mustard
- 1 tsp. salt
- 1 1/2 Tbsp. poppy seeds
Preparation:
DRESSING:
1. In a food processor, combine vinegar, sugar, salt, mustard and onion. After the ingredients are well blended, slowly add in oil.
2. Pour dressing ingredients into a jar. Add poppy seeds and shake well.
3. Store in refrigerator.
SALAD:
1. Wash and dry spinach leaves. Tear into bite sized pieces.
2. Wash and slice strawberries.
3. In a salad bowl, toss spinach with dressing.
3. Add strawberries. Toss lightly. Serve.
VARIATIONS:
1. To dress up the salad, add 1/4 cup almonds (blanched and slivered) or 1 small purple onion (sliced).
2. While bottled dressings just can't compare to fresh, homemade dressings in taste, this recipe can be simplified by using bottled Poppy Seed Salad dressing.
