Kids' Favorite Potato Soup (Parve)

I imagine this is one of those recipes my kids will ask for when they are older and have their own families. On cold winter days, this Potato Soup has warmed us up inside, turning the chilly house around us into a cozy home.

Prep Time: 20 minutes

Cook Time: 01 hours, 30 minutes

Ingredients:

  • 8 large potatoes
  • 4 carrots
  • 3 Tablespoons oil
  • 3 Tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 cup soy milk (for cooking)
  • 8 cups water
  • 2 small onions
  • 2 celery stalks

Preparation:

1. Peel and cube potatoes. Peel and thinly slice carrots. Peel onions. Wash celery.
2. Heat oil in soup pot. Saute potatoes in oil for 5 minutes.
3. Stir in carrots. Stir in flour, salt and paprika. Add soy, water, onion and celery.
4. Bring to a boil. Lower temperature. Cover and simmer for 1 1/2 hours. Stir occassionally.
5. Remove onion and celery. Serve warm.
