Kosher Simple Pumpkin Soup (Parve)

By Giora Shimoni, About.com

My eight-year-old son came home from school one day with this recipe (source unknown) in his hand. We made the soup together, and we were amazed at how easy it was to make and how delicious it tasted. I think I'll continue sending him to school!

Prep Time: 10 minutes

Cook Time: 01 hour, 30 minutes

Ingredients:

  • 2 pounds pumpkin, peeled and cut into chunks
  • 1 carrot
  • 1 onion
  • 3 garlic cloves
  • 4-5 cups water
  • 3 tablespoons chicken soup mix (pareve)

Preparation:

1. Cut the pumpkin, carrot and onion into cubes.
2. Place above vegetables and garlic in a soup pot. Add water and soup mix.
3. Bring soup to a boil and then simmer for 1 1/2 hours, until the pumpkin is soft.
4. Using an insertion blender, blend the vegetables from the soup until smooth.
5. Season with salt and pepper according to taste.

SERVING SUGGESTIONS:

Heat before serving.
