Marinated Cauliflower (Parve)

Looking for a healthy, light, make-ahead, parve side dish? Simply marinate cauliflower. The result is a tender vegetable that is bursting with flavor.

Prep Time: 10 minutes

Cook Time: 2 minutes

Ingredients:

  • 1 pound (1/2 kilo) cauliflower florets
  • 1/2 cup olive oil
  • 2 Tablespoons vinegar
  • 2 Tablespoons lemon juice
  • 3 cloves of garlic, minced
  • 1 teaspoon oregano
  • 1/2 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Preparation:

1. Blanch cauliflower by placing florets in lightly salted and boiling water for 2-3 minutes, draining, and rinsing immediately with ice water.
2. In a small bowl or jar, combine marinade ingredients.
3. Mix blanched cauliflower with marinade.
4. Cover and chill overnight, mixing occasionally.

TIPS:

1. Buy cauliflowers with firm, heavy, compact heads. The color should be snowy white, without brown specks.
2. Separate cauliflower florets by cutting them apart from the inside of the cauliflower.
3. Store cauliflower and marinade in a zippered plastic bag. This makes it easy to see that the marinade covers all the cauliflower.
