Lox and Eggs (Dairy or Parve)

To make mom happy on Mother's Day, serve her a Sunday brunch that includes these Scrambled Eggs and Lox, toasted bagels, fresh melon, and coffee.

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients:

  • 2 Tablespoons butter or parve margarine
  • 2 onions, chopped
  • 5-6 ounces (150 grams) smoked salmon, cut into strips
  • 6 eggs, lightly beaten
  • freshly ground black pepper
  • fresh chives, chopped

Preparation:

1. In a skillet, melt butter or margarine over low heat.
2. Add onions. Saute over medium heat until translucent.
3. Stir in salmon.
4. Pour eggs over salmon and onions. Stir over low heat until soft curds form. Be sure to remove from heat before the eggs get dry.
5. Season with pepper.
6. Garnish with chives, and serve with toasted bagel.
