Looking for a new Passover dessert recipe? These Lemon Bars are a nice change of pace from the traditional Sponge Cake and easy-to-make Chocolate Brownies usually baked on Passover.

Prep Time: 20 minutes

Cook Time: 50 minutes

Ingredients:

  • CRUST:
  • 3 sticks margarine, room temperature
  • 3/4 c. Passover powdered sugar
  • 1/2 tsp. salt
  • 2 c. cake meal
  • 1 c. potato starch
  • FILLING:
  • 8 eggs
  • 4 c. granulated sugar
  • 1/2 c. potato starch
  • 3/4 c. lemon juice

Preparation:

1. Combine crust ingredients. Press into a sprayed 11x17 inch pan.
2. Bake at 350 degrees Fahrenheit for 20 minutes.
3. Combine filling ingredients. Pour on crust.
4. Bake another 30 minutes.
5. Sprinkle with more Passover powdered sugar.

NOTE:

For these Lemon Bars to be pareve and kosher for Passover, all ingredients must be pareve and kosher for Passover.
