Lemon Bars (Pareve, Passover)

Looking for a new Passover dessert recipe? These Lemon Bars are a nice change of pace from the traditional Sponge Cake and easy-to-make Chocolate Brownies usually baked on Passover.

Prep Time: 20 minutes

Cook Time: 50 minutes

Total Time: 1 hour, 10 minutes

Ingredients:

  • CRUST:
  • 3 sticks margarine, room temperature
  • 3/4 c. Passover powdered sugar
  • 1/2 tsp. salt
  • 2 c. cake meal
  • 1 c. potato starch
  • FILLING:
  • 8 eggs
  • 4 c. granulated sugar
  • 1/2 c. potato starch
  • 3/4 c. lemon juice

Preparation:

1. Combine crust ingredients. Press into a sprayed 11x17 inch pan.
2. Bake at 350 degrees Fahrenheit for 20 minutes.
3. Combine filling ingredients. Pour on crust.
4. Bake another 30 minutes.
5. Sprinkle with more Passover powdered sugar.

NOTE:

For these Lemon Bars to be pareve and kosher for Passover, all ingredients must be pareve and kosher for Passover.

this is a seder staple!!, Member usagi636

This recipe gets made every year for my family's seder!! It's easy and tastes delicious. The only reason I can't give it 5 stars, is that I have to remember every year, that I can never find an 11x17 pan (I don't think it exists...atleast not in my area.) I use two 9x9 (I believe) square pans and they work perfectly. The lemon doesn't overshadow the crust, the flavors blend perfectly.
