This Spinach Kugel is the perfect dish to serve for Sabbath meals during the week of Passover.

Ingredients:

  • 1 1/2 sticks margarine
  • 2 cups chopped onion
  • 1 cup chopped celery
  • 1 cup sliced mushrooms
  • 3 cups shredded carrots
  • 1 1/2 cup matzo meal
  • 2 pounds frozen chopped spinach, thawed and drained
  • 6 beaten eggs
  • salt and pepper to taste

Preparation:

1. Squeeze liquid out of thawed spinach.
2. Saute onion, celery and mushrooms in margarine for 10 minutes, stirring often.
3. Add all remaining ingredients.
4. Pour into a greased 9x13 inch casserole dish.
5. Bake for 40-45 minutes at 350 degrees Fahrenheit, or until firm.

TIPS:

1. Be careful not to overbake.
2. Cool before cutting.
