Ingredients:
- 1 pound (.5 kilo) potatoes, peeled and chopped
- 1 onion, peeled and chopped
- 4 ounces (125 grams) mushrooms, chopped
- 1 cup matzo meal
- salt and freshly ground black pepper to taste
Preparation:
1. Boil potatoes in water until tender. Drain and mash potatoes.2. In a large frying pan, heat canola oil over medium-high heat. Then saute onion and mushrooms for 3-4 minutes.
3. In a large bowl, mix the mashed potatoes, sauteed onion and mushrooms, matzo meal, and seasonings together. Form 12-15 patties.
4. In the same large frying pan used earlier, heat canola oil over medium-high heat. Fry croquettes on each side until cooked through and golden brown (6-8 minutes per side). Cool on paper towels.
