Potato Croquettes (Parve)

Croquettes are minced meat or vegetables, formed into cylinder or disk shapes, breaded, and then fried. This Potato Croquette recipe forgoes the breading so that these croquettes are easy to prepare and kosher for Passover. I serve these croquettes as a side dish to chicken or fish, and they always disappear quickly.

Ingredients:

  • 1 pound (.5 kilo) potatoes, peeled and chopped
  • 1 onion, peeled and chopped
  • 4 ounces (125 grams) mushrooms, chopped
  • 1 cup matzo meal
  • salt and freshly ground black pepper to taste

Preparation:

1. Boil potatoes in water until tender. Drain and mash potatoes.
2. In a large frying pan, heat canola oil over medium-high heat. Then saute onion and mushrooms for 3-4 minutes.
3. In a large bowl, mix the mashed potatoes, sauteed onion and mushrooms, matzo meal, and seasonings together. Form 12-15 patties.
4. In the same large frying pan used earlier, heat canola oil over medium-high heat. Fry croquettes on each side until cooked through and golden brown (6-8 minutes per side). Cool on paper towels.

YIELDS: 6-8 servings
