We used to prepare baked potatoes in the microwave. But we’ve discovered that baked potatoes are much tastier when slowly baked in the oven. Simply, wash and dry, puncture with a fork, rub olive oil and salt all around, and slowly bake in the oven. Serve with a green salad for a lite, but satiating meal.

Total Time: 1 hour, 35 minutes
Yield: 2 servings
Ingredients:
- 2 medium baking potato
- 2 tsp. olive oil
- 1 tsp. salt
- 4 tsp. butter
Preparation:
1. Preheat the oven to 300°F (150°C).
2. Wash and dry the potatoes. With a fork, pierce several holes all around the potatoes. Rub the olive oil and salt all over the potatoes.
3. Place the potatoes on the top rack in the preheated oven. Place a pan on the rack below in case of drippings.
4. Bake the potatoes for 90 minutes, or until soft inside.
5. Cut the potatoes in half, and put butter inside the hot potato.
Variation: Instead of butter, put shredded Cheddar cheese on the hot potato.
