My kids like chocolate-filled Hamentachen best. Robin Zusmann of Atlanta, Georgia contributed this Hamentachen recipe which includes homemade chocolate fillings for the traditional Purim pastry.

Ingredients:
- 4 eggs
- 1 cup canola oil
- 1 1/4 cup sugar
- 2 teaspoons vanilla extract
- 3 teaspoons baking powder
- 1/2 teaspoon salt
- 5 1/2 cups flour
- CHOCOLATE FILLING 1
- 3 squares unsweetened chocolate
- 1 can sweetened condensed milk
- 1 teaspoon vanilla extract
- CHOCOLATE FILLING 2
- 1/2 cup cocoa
- 1/2 cup sugar
- 1/3 cup whole milk or whipping cream
Preparation:
1. Beat eggs. Then beat in oil, sugar, vanilla, baking powder and salt.
2. Add flour gradually and mix thoroughly. Knead until smooth.
3. Roll out on a floured surface and cut into 3” or 4” rounds (you can use a drinking glass). Place on greased cookie sheet.
4. For Chocolate Filling 1, heat chocolate and milk slowly stirring until smooth. Stir in vanilla. For Chocolate Filling 2, mix cocoa, sugar and milk or cream.
5. Put 1 teaspoon of filling in each round. Shape each circle into a triangle.
6. Bake at 375 degrees for 15-20 minutes or until lightly browned.
