Tangy Lettuce Salad (Parve)

The Tangy Lettuce Salad is a big hit every time I serve it. The secret to its success is the combination of slightly spicy dressing with sweet sugared pecans and mandarin oranges.

Prep Time: 15 minutes

Ingredients:

  • 1 head of butter lettuce, washed, dried and chopped
  • 1 can of mandarin oranges
  • 1/2 cup of sugared pecans
  • 1 avocado, cut into chunks
  • 1/4 cup sugar
  • 1/4 cup red wine vinegar
  • 2 teaspoons lemon juice
  • 1/4 cup canola oil
  • 2 teaspoons chili sauce
  • 1/2 teaspoon Worcestershire sauce
  • 1/4 teaspoon dry mustard
  • 1/4 teaspoon curry powder
  • 2 dashes Tabasco sauce
  • 1 clove garlic, crushed

Preparation:

1. Put lettuce, oranges, pecans and avocado in a bowl.
2. Put remaining ingredients into a screw top jar. Shake the jar well to mix all the ingredients together.
3. Just before serving, pour the dressing over the salad. Toss and serve.
