Creamed Potato Squash Bake (Dairy)

Ingredients:

  • 2 pounds (1 kilo) potatoes
  • 1 sweet potato
  • 1/2 pound (1/4 kilo) fresh pumpkin
  • 2 Tablespoons canola oil
  • salt and pepper to taste
  • 1 8-ounce (250 gram) carton cooking cream
  • 3 Tablespoons onion soup powder
  • 100 grams grated cheese

Preparation:

1. Preheat oven to 425 degrees Fahrenheit (220 degrees Celcius).
2. Spray a pyrex baking dish with non-stick spray.
3. Cube all vegetables. Add oil and a pinch of salt and pepper. Pour into baking dish.
4. Bake for one hour.
5. In a skillet, bring cream and onion soup to a boil. Pour over potato mixture.
6. Sprinkle with grated cheese.
7. Bake uncovered for 15 minutes.
8. Serve bubbling hot.
