Carrot Kugel (Parve)

This carrot kugel tastes like carrot cake, which makes it a wonderful sweet side dish for Rosh Hashanah. And since it is so simple to prepare, it will add to your holiday meal without adding to your holiday workload. Your guests, especially the children, will gobble up this delicious kugel.

Prep Time: 15 minutes

Cook Time: 1 hour

Total Time: 1 hour, 15 minutes

Ingredients:

  • 2 cups grated carrots
  • 3 tablespoons orange juice
  • 1 cup margarine, softened
  • 1/2 cup brown sugar
  • 1 egg
  • 1 1/2 cups whole wheat flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Preparation:

1. Preheat oven to 350 degrees Fahrenheit (175 degrees Celcius). Spray a baking pan with non-stick spray.
2. Using a food processor, finely shred carrots. Mix carrots with juice. Set aside.
3. Using a mixer, beat margarine and sugar. Add egg. Add dry ingredients. Lastly, add carrots. Mix well.
4. Pour batter into pan. Bake, uncovered, for 1 hour.

YIELDS: 8 servings.

what about the lemon-sauce?, Member Remy0

This is pretty much my Grandma Leavitt's carrot pudding, minus the walnuts and the lemon sauce we trickled over the top. I'm willing to share the recipe. Now I know why I love kugel's so much. ;D
