Roasted Peppers are a colorful, delicious, healthy and easy-to-make side dish that can compliment both a kosher dairy or meat meal. Slice the peppers, add garlic cloves, mix with olive oil, and roast.

Ingredients:
- 4 bell peppers of various colors (red, yellow, orange, green)
- 12 garlic cloves, whole
- 2 tablespoons olive oil (you can use another oil during Passover)
Preparation:
1. Preheat oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a shallow pan with parchment paper.
2. Cut peppers into strips and place in pan with garlic cloves. Mix peppers and garlic with oil.
3. Roast peppers until edges are blackened and garlic is tender.
