Candied Sweet Potatoes (Parve)

Easy-to-make and yummy-to-eat. There are NEVER any leftovers of these Candied Sweet Potatoes in my home.

Ingredients:

  • 3-4 sweet potatoes
  • 1/3 cup margarine (pareve)
  • 1 cup brown sugar

Preparation:

1. Bring enough water to cover potoates to a boil.
2. Add pototoes to the boiling water. Cover. Cook for 10-15 minutes.
3. Drain. Cool to room temperature. Peel. Slice into 1/2 inch rounds.
4. Melt margarine in a skillet over medium heat.
5. Roll the sweet potato rounds in brown sugar.
6. Fry the sugar-coated sweet potato rounds until tender and browned.

SERVING SUGGESTIONS: Serve with roast chicken and a green salad or vegetable.
