Apple Kugel (Parve, Passover)

From Word of Mouth Kosher Catering, for About.com

While I'm personally not a big fan of Apple Kugel (is it a dessert or a side dish?), I do really enjoy eating it during Passover. Something about the bland and heavy feeling of Passover food makes Apple Kugel a welcome Pesach dish.

Prep Time: 20 minutes

Cook Time: 1 hour, 00 minute

Ingredients:

  • 6 Golden Delicious apples, peeled and sliced thin
  • 2 eggs, beaten
  • 1/2 cup potato starch
  • 1/4 cup oil
  • 3/4 cup sugar
  • 1/4 cup orange juice
  • 1/2 cup chopped walnuts

Preparation:

1. Mix apples, eggs, potato starch and oil.
2. Pour into an 8 inch square pan
3. In a separate bowl, mix sugar, juice and walnuts.
4. Pour over apple mixture.
5. Bake at 350 degrees Fahrenheit for 1 hour.
6. Serve cold or at room temperature.

NOTE:

This recipe can be doubled and baked in a 9x13 inch pan.
