1. Tofu Rice Stir-Fry:

If you have vegetarians guests for Shabbos, this Tofu Rice Stir-Fry is the perfect dish to serve. With tofu, egg, rice and vegetables, it can be meet all their meal needs. Like many stir-fry recipes, there are a few steps to the recipe, but none of them are very taxing. And if you use frozen vegetables rather than fresh, then there is less to chop. Be sure to make plenty of it because I've noticed that meat eaters at my Shabbat table also like to take some as a side to their chicken.

2. Breaded Fried Tofu - Tofu Schnitzel:

The other day when I was making chicken schnitzel for his carnivorous siblings, I decided to make Tofu Schnitzel for my vegetarian son. I just sliced a tofu cake, breaded it and then fried it as if it was a piece of chicken. He loved it!

3. Tofu-Vegetable Stir-Fry:

4. Tofu Vegetable Pie:

This Tofu Vegetable Pie was a creative response to my need one Shabbat to use the pie crust in my freezer and the tofu and vegetables in my fridge to feed a large number of Shabbos guests, some of who were vegetarian. The side dish had to be pareve so I could serve it with my Sabbath chicken. I sauteed the tofu and vegetables, poured them into the deep dish pie crust, and baked a delicious, non-dairy vegetable pie.

5. Tofu-Scallion Stir-Fry:

This Tofu Stir-Fry is a welcome change from our usual baked tofu. You'll be compensated for the extra bit of effort it takes to stir-fry (rather than bake) with a more delicious dish. This Tofu-Scallion Stir-Fry is so tasty that the meat-eaters at my Shabbos table ask the vegetarians to share.

6. Baked Sesame Teriyaki Tofu:

Perhaps my vegetarian friends were afraid they would go home hungry. Whatever the reason, I'm glad they brought this Baked Sesame Teriyaki Tofu dish with them to Friday night dinner. We enjoyed this healthy, tasty side dish for dinner that night, and since then we have gotten in the habit of preparing it often for Shabbat. It is so easy to make that my kids can prepare it all by themselves.

7. Miriam's Israeli Tofu:

Miriam's Tofu, lightly fried tofu mixed with sesame and sunflower seeds, comes from ESRA's Meatless Meals cookbook.

8. Pasta Primavera Tomato Sauce with Tofu:

In her natural whole vegetarian kosher cuisine cookbook, Nutrilicious, Edith Rothschild writes that her Primavera Tomato Sauce with Tofu recipe is versatile, quick and easy to prepare, and attains gourmet status when served over pasta.
