Since my teenage son declared himself a vegetarian, I have been on the lookout for protein-rich vegetarian recipes for him. And since he likes tofu, I feel particularly pleased when I find tofu recipes that are easy for me to make and delicious for him to eat. Miriam's Tofu, lightly fried tofu mixed with sesame and sunflower seeds, comes from ESRA's Meatless Meals cookbook.

Ingredients:
- 1 block firm tofu (approximately 8 ounces or 250 grams)
- soy sauce
- flour
- 1/4 cup sesame or peanut oil or combination of the two
- 1/2 cup sesame seeds
- 1/2 cup sunflower seeds
- chopped green onions or chives for garnish
Preparation:
1. Slice tofu widthwise into medium slices. Dip slices into soy sauce and then into flour. Heat the oil and fry gently on both sides. Remove and place on serving plate.2. Into the same pan, put the sesame and sunflower seeds and stir fry 1-2 minutes until golden. Pour seeds over the tofu and season with drops of soy sauce.
3. Sprinkle with green onion or chives for garnish.
TIP: It is best to drain tofu cakes before working with them. Drain tofu cakes by wrapping in paper towels and placing under a cutting board. Weigh down cutting board by placing some canned goods on top. Let stand for 10 minutes. Unwrap the tofu cakes.
